Sakizuke – Monaka | Nara Zuke | Myoga | Ankimo | Kinome – The meal begins with “Sakizuke,” a series of small, flavorful bites. Monaka, a crispy shell filled with delectable ingredients, dances on the palate alongside the Nara Zuke pickles. The creamy Ankimo and aromatic Myoga add layers of complexity to the dish, leaving a memorable first impression.

Zensai – Yaki Nasu | Kombujime Tai | Naga Imo | Irizake Jelly Next comes “Zensai,” an array of appetizers. The smoky Yaki Nasu, marinated Kombujime Tai, and the smooth Naga Imo are highlighted by the umami-rich Irizake Jelly. This course showcases the chef’s creativity in blending textures and flavors.

The Komochi Ayu, Toro Sawara, Ikura, and Tara Shirako are remarkably fresh, showcasing the chef’s dedication to sourcing the finest seasonal delicacies. Each bite is a revelation of flavors from the land and sea.

Mountain & Sea – Kegani | Maitake | Ginnan | Jumbo Mushroom “Mountain & Sea” takes the palate on a journey. The Kegani crab, Maitake mushrooms, Ginnan ginkgo nuts, and the impressive Jumbo Mushroom create a symphony of earthy and oceanic notes. This course is a favorite for its rich and savory profile.

Binchotan – Unagi | Cauliflower The “Binchotan” course features Unagi grilled to perfection using Japanese Binchotan charcoal, imparting a crispy texture to the bottom while maintaining a tender interior. The combination with roasted cauliflower adds a delightful contrast of flavors and textures.
